Our Story

"Homemade Udon Taira" is a udon specialty restaurant in Hirosaki, Aomori, where every bowl is made with heart and care.

Our handmade noodles use fragrant Hokkaido-grown "Kitahonami" wheat as the base, carefully blended in our own unique ratio. Every morning we knead the dough with care, in pursuit of a satisfying chewiness and silky smoothness. Please enjoy our restaurant's signature texture, where each ingredient's character comes together in perfect harmony.

Our broth is a special blend of several types of niboshi (dried sardines) combined with bonito and kelp — a deeply flavorful dashi that draws out the best of each ingredient.
